RECIPE
Seafood Paella
Serves 6
Preparation time : 1 hour 30 minutes
Ingredients
400 grams of paella rice (redondo/round grain type)
250 grams of prawns (gambas arroceras)
350 grams of clams
300 grams of squid rings
400 grams of fresh mussels
1 onion
2 cloves of garlic
100 grams of fried tomato sauce (tomate frito)
2 nyoras (Spanish dried peppers)
100 grams of fresh or frozen peas
1 bottle of olive oil
1 bay leaf
1 pinch of saffron (or yellow food colouring)
1 pinch of salt
1 slice of lemon to garnish
Step 1
Before cooking the seafood paella, you should get all ingredients ready. To do this, wash all the seafood well, especially mussels, which must be left in water for about six hours to remove any sand. Then, peel and chop as finely as possible the onion and garlic.
Step 2
Now, cut into fine strips/ julienne the nyora, then fill the bottom of the paella pan with olive oil. When the oil is hot, fry the onion, garlic, ñora, tomatoes and a pinch of salt. To prevent the mixture changing colour, you should stir it constantly with a wooden spoon. Cook the paella sauce for about 15 minutes.
Step 3
After this time ,add the squid and stir again for 10 minutes. Then, introduce the rice and sauté it for a few minutes, moving occasionally.
Step 4
While the sauce is cooking, take a pot, fill it with 800 ml of water and boil the mussels and clams. Add a pinch of salt and a bay leaf. Cover it and when it starts to boil remove from heat. Strain the broth and set aside for later.
Step 5
To continue preparing the paella, add to the pan the sauce, fried peas and prawns. Then, cover everything with the broth previously strained from the mussels and clams and add the saffron or food colouring. The ratio of broth to rice is normally 2:1 approximately.
Step 6
Stir the paella rice, then let it settle and cook on medium heat. Move the pan occasionally so that everything cooks evenly and there aren’t any burnt or undercooked parts.
Step 7
Halfway through cooking, spread the mussels and clams over the paella and garnish with strips of red pepper. Check for salt and wait till all the broth has been absorbed.
Step 8
When ready, remove from heat and cover with a cloth to rest for five minutes. Then serve the seafood paella with a slice of lemon.
